{one} is the loneliest number

...and how true is that! I couldn't make just one of these...

...because we are going with all my siblings (minus Elder Crandall serving in Cambodia until August) and my parents on an Easter Picnic!

Growing up we would always go to the winter range in Nephi, Utah, to camp out...okay, really we only camped over Friday night about four or five times that I can remember, but we'd always have such a blast hiding behind the sagebrush, looking for eggs we had colored the week before, and just being kids.

This year, we are going to carry on the tradition of having an Easter Picnic, complete with egg hunt, sloppy-joes, pistachio salad, chips, and these yummy treats (one even has a quarter in it for a big prize...a bag of Cadbury Mini Eggs)!


They are really fun to make and don't take too much time. After making your batter, just divide it into how many colors you want, color with food coloring, and spoon small (very important, or else they end up WAY too BIG and funny lookin') quantities of the various colors into your cupcake liners...bake as directed. Frost with your favorite frosting, top with green colored coconut and add a little sumpin' in the grass...in this case, it's Whopper Malt Eggs...it could be those cute marshmallow bunnies, or jelly beans.

After our picnic, we'll clean up (as best we can in the middle of nowhere) and head to Pocatello to the Dodge National Circuit Finals Rodeo...My boys' first EVER rodeo, including Ryan...should be a fun day!

As much as I'm looking forward to riding four-wheelers and skeet shooting and delicious food, I'm way more excited to see my family. I just love 'em so much!!! My sisters and I are almost giddy...every time we think about it! ♥♥♥

Sounds like you are going to have a blast! I remember those cupcakes out in Sage Valley...your mom made them then and they were delicious! Enjoy your day with your family! :)

Those cupcakes bring back memories. When we would have our Easter picnic at the farm either Grandma or Marsha always brought cupcakes covered in colored coconut with jellybeans on top. But never the festive middle - look at you go. Hope you have a fun weekend!

Our family has such wonderful traiditions~ Loved the cupcakes and biting into the quarters ;) you know... if I hadn't bit into one, I had my own quarter to insert just as a joke lol... Great Times on the ranch!

These are the cutest cupcakes ever as far as I am concerned! Way to go I love it I think I may add this as an Easter tradition! I love that you have such fun and wonderful times with your family! It gives me something to aspire too! Way to capture the true Easter spirit! :)

What great Easter Traditions! Family is great at Holidays. And what beautiful eggs you colored. Conference was wonderful. I am going to have to listen to it again. Hope things are going well . . . And we need to set up our play date again.
