While I luuuuurve corn ON the cob, this corn off the cob is divine!
And whoever came up this THIS idea, rocks! I wish I could remember who gave us the electric knife for a wedding gift. I use it once a year (and it's AWESOME!) - for this:
I used my time this morning making green pepper jelly (which looks black in the picture):
And after picking and shucking corn in the afternoon, I spent the evening making this delicious concoction:
Corn Relish.
I ate a good portion of what wouldn't fit in the second batch with a bowl of corn chips. Mmmmmmmm!
Bring on the four boxes of peaches and pears, baby!!!

in my case {since i never have had corn relish} i luuuurrvvee cream corn. i really want to know how you find the time to do all this. seriously! i'm not joking. how the HECK do you do it ALL? super woman. that's what you are!
btw--i'm coming to idaho next week. i want to see you! my mom's getting married. in the IF temple. she's having an open house {my sister and i are planning it} next friday in pocatello. i'm pretty sure your parents are invited. which means you can come. or i could see you in idaho falls...or something like that.
anywho....it's going to be a short trip for me, but i would luuurrrvvee to see you!
