I promised Ryan I would make him some Cherry Cream Pie, just because he was craving some...and I know how cravings are...need it now, and not later! Plus, he's been working REALLY hard on finishing up his thesis, so I thought he deserved a little sumpin' sumpin'.
Well, later on in the week (today), he asked if he could have some of said pie, so I rushed to the store to buy a grahm cracker crust, because I lacked the motivation and energy to make a pie crust from scratch. Pathetic, I know...
But it turned out just as good!
This is one of Ryan's all-time favorites. The best thing? It's easy-peasy-nice-and-cheesy.
Filling:
1 pint of whipping cream
- whip till it's not quite stiff...almost but not quite
1 8 oz. package cream cheese
1 Cup powdered sugar
- cream together cream cheese and powdered sugar
- combine whipping cream and cream cheese mixture
- mix well
- Pour into cooked and cooled pie crust OR pour into grahm cracker crust
- carefully pour 1 can of cherry pie filling on top, and spread evenly over filling
- refrigerate for at least 1 hour...longer is better
No need for a plate, just dig right in!
